In the Five Elements of oriental medicine, wood, fire, earth, metal and water, the earth element is associated with the digestive system and the sense of taste -- so Earth Day is a great day for exploring delicious, sustainable and earth-friendly foods!

According to earthday.org, "The first Earth Day on April 22, 1970, mobilized 20 million Americans from all walks of life.
